The real cool part... but I don't know all the correct terminology so here's some notes from my research:
Offline Edit
First draft edit, using low-res / proxy footage used to determine sequence, with focus on laying out the story.
Online Edit
Everything that builds on the initial offline edit, to polish and refine the cut into a presentable format. This includes pacing, colour correction, sound design etc.
